Jessica Seinfeld’s Chocolate Chip Cookies

This recipe is from Jessica Seinfeld's much talked about book, "Deceptively Delicious."

These are so easy and fast to make, but watch out for flying chickpeas! If using a standing mixer, partially cover the bowl with a dish towel to keep the chickpeas from flying out. (Of course my kids think it’s hysterical when this happens.)Prep: 20 minutes, Total: 31-33 minutes, Makes 2 dozen cookies

Nonstick cooking spray
1 cup firmly packed light or dark brown sugar brown sugar
¾ cup trans fat free soft tub margarine spread
2 large egg whites
2 tsp vanilla extract
1 (15 oz) can chickpeas, drained and rinsed (aka garbanzo beans)
2 cups (12 ounces) semi-sweet chocolate chips
¾ cup chopped walnuts (optional)
¾ cup raisins (optional)
2 cups all purpose flour
½ cup old fashioned oats
1 tsp baking soda
1/4 t salt

Preheat oven to 350. Coat a baking sheet with cooking spray.

In a large mixing bowl or the bowl of an electric mixer, beat the sugar and margarine with a wooden spoon or on medium speed until smooth. Beat in the egg whites and vanilla, then the chickpeas and chocolate chips. Add the flour, oats, baking soda and salt, and mix on low speed until a thick dough forms.

Drop the dough by the tablespoonful onto the baking sheet, spacing the cookies about 2 inches apart. Press gently with a fork to flatten. Bake until the cookies are golden brown and just set, 11 to 13 minutes; do not overbake. Transfer to a rack to cool.

Store in an airtight container for up to 3 days.

:: Now I was really skeptical about her recipes but thought since I had the stuff I may as well try to make these - we really liked them, really liked them..We were totally surprised! So give it a try and add some more fiber and protein to your diet through cookies ~ you just might like it! ::

:: Last night was the night for the first official reveal of a new ministry that Lisa B and I have initiated ::

:: It is the third Wednesday of every month @ 7:30 pm in Cafe CLA & we are so excited about it! ::

:: Here is our vision ::
"We desire to touch women's lives through God's word, tangible acts, sincere fellowship and abundant blessings "

:: We are so excited to see this ministry and new wing of the women's ministry @ CLA take off, so come on out our first event is on September 17th ~ We'd love to host you for the night! ::

{So this has been what I have been busy with for the last few months....but it was SO worth it!}

:: Right now it's "What do you look like RIGHT now?" time - isn't that spicey???? Yeah, okay...not so much, but hey I do what I can! ::

:: This is me sans make-up, hair product and wearing the same top I wore on Sunday, Wednesday afternoon {after I showered @ 2:00 pm} and I am wearing it again today - so there...join in, post a shot of you where you're at right as you are ~ I promise we'll love you anyway ;) ::

:: Hope ya'll are gettin' things done today, cause tomorrow the sun just might be out and then we will be able to run off and do better things like wade in creeks, lay in the sun & read a new book! ::

:: It was a "YEE HAW" Happy Birthday time @ Madelyne's 4th Birthday ::



:: It is unbelievable to watch this little lady grow up ~ we were there when little Miss. M was born and I can't believe it was 4 years ago!!! ::

:: Last night Lisa and I were talking about when we both accepted Jesus as our Lord & Savior & it was when we were both 4 ~ So I look forward to watching as Madelyne chooses to invite Christ into her heart ::

:: Miss. Mo, you have such an exciting year ahead of yourself and we will be right there praying you through every step. We love you SO much! ::
